Shopping list:
EVOO
1 lg onion chopped
1 clove garlic, minced
3 carrots, thinly sliced
1/2 t chili powder
5 cups of broth,
1 cup lentils
1 can stewed tomatoes
Grated Parmesan Cheese
Cook onions in oil, add garlic, carrots and cook until softish
Add chili powder, broth, and lentils
Gently cook until lentils are soft.
Just before serving, add the stewed tomatoes, bring back to a boil'
Pass the Parmesan
